Some Yummy Recipes...
Cheesy Ham and Hash Brown Casserole
• 1 (32 ounce) package frozen hash brown potatoes
• 8 ounces cooked, diced ham
• 2 (10.75 ounce) cans condensed cream of potato soup
• 1 (16 ounce) container sour cream
• 2 cups shredded sharp Cheddar cheese
• 1 1/2 cups grated Parmesan cheese
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish. In a large bowl, mix hash browns, ham, cream of potato soup, sour cream, and Cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese. Bake 1 hour in the preheated oven, or until bubbly and lightly brown. Serve immediately.
Pumpkin Chocolate Chip Muffins, SUPER EASY
• 1 recipe of carrot cake, dry ingredients only (I use 1 pkg. carrot cake mix)
• 20 ounces (3/4 large can, or about 1 1/3 cups is what I do) Pumpkin Puree
• 3 large egg whites
• 1/3 cup apple juice
• 2/3 cup chocolate chips (I like semi-sweet because the muffin is sweet already)
Mix everything but the chocolate chips together on low until moistened. Beat on medium for 2 minutes. Then scrape the sides of the bowl and fold in the chocolate chips. Bake in either a greased muffin tin or paper liners 18-22 minutes, at 350. (I prefer the greased tin because they stick to the liners, which I don’t like. But healthier with the liners).

Apricot Scone Recipe

Apricot Scones in a Jar

INGREDIENTS:
-2 CUPS all-purpose unbleached flour
-1/2 CUP vanilla sugar** (I just used regular sugar.)
-1/4 CUP nonfat dry milk powder
-2 tsp baking powder
-1 tsp dried lemon/orange peel
-1/4 tsp salt
-1 CUP dried apricots (or blueberries, cranberries, etc.)
DIRECTIONS:
Stir together flour, sugar, milk, baking powder, lemon peel & salt. Layer the dried ingredients & the apricots (or other dried fruit) into one-quart canning jar, tapping gently on counter between layers to settle before adding the next. (I just plopped my dry ingredients on the bottom & the fruit on top.) Stores at room temperature for up to six weeks, or freeze for up to six months.
*You can also add shortening to gift jar by cutting it into dried ingredients before adding to jar. It has a shorter shelf life with the shortening added, though.
** To make vanilla sugar, fill one-quart jar with sugar. Split vanilla bean in half lengthwise & add both halves to sugar. Flavor gets better after a couple of weeks, & it will keep as long as regular sugar.
INSTRUCTIONS FOR GIFT TAG:
Stir together flour, sugar, powdered milk, baking powder, lemon peel & salt.
Cut in 1/3 cup shortening using a pastry cutter or fork until mixture resembles coarse crumbs.
Add ¼ cup water and one beaten egg
Stir until just moistened. Turn dough out onto a lightly floured surface and knead for 12-15 strokes, until nearly smooth ball.
Pat to 1/2'” thickness (circular shape).
Cut into desired shape & place 1" apart on an ungreased baking sheet.
Brush with milk. Bake at 400 degrees F for 12-15 minutes or until golden.
Transfer to a rack to cool slightly & serve warm. Enjoy!

Gearing up for a new year!
Hey everyone! MOPS is starting back up at Creekside on September 11th, at 9:00am in the church sanctuary. The cafe was getting a little crowded, so we decided to try out using the big room for our regular meetings. Childcare rooms remain the same, and you will see the big sanctuary doors open right when you walk into the lobby. You should be getting an email or a phone call from your table leader soon (if you haven't already) to touch bases and so you know who you'll be with this semester. When you come there will be a name tag at your seat so that you can easily find where to settle down and get comfortable.
This year's theme is called "Together on Planet Mom" and it aims to help women reflect and grow in the way that motherhood has changed ALL of their relationships in life. It should be really interesting and insightful (and probably guaranteed to make you both laugh and cry!) to hear about and discuss the topics we have selected for the Fall. Can't wait to see you all soon!

Last Meeting This Friday!!
Our last meeting is this Friday, 5/15. A few reminders for the meeting:
Although this is our last official meeting for the (school) year, our group as a whole and your table may plan some summer events in order to stay in touch and see each other throughout the summer. This will be discussed at the meeting.
Friday is Moppets appreciation day! If you can, bring a card or have your kids make a token of thanks for the hard work of our childcare workers & volunteers. Your table leader should have a list of names of the wokers in each room if you don't know all of their names.
Pre-registration for the Fall begins this Friday. To hold your spot all you need to do is fill out a registration form and pay for half of your Fall semester cost. Our pre-reg prices for the Fall are $60 for mom alone, $70 for mom +1 child, $80 for mom +2, and $90 for mom +3. Registration is first come, first serve, and the only factor that limits registration is space in the childcare rooms. If you have a friend who would like to pre-register they can mail a check to the church with "MOPS registration" in the memo and email her registration info to creeksidemops@gmail.com. After May 29th the registration costs go up $2.
One of our co-coordinators (and founders of Creekside MOPS), Cynthia, will be moving to Nebraska this summer. If you would like to bring to the meeting a card or note of thanks and best wishes to her, that would be great!
