October Events

Fall is in the air! We have some fabulous activities lined up this month and hope you are able to join us.

October 8 - MOPS Meeting (9:00-11:00 am): Creating Halloween/Fall bags

October 14 - Rubio's Fundraiser (4:00-8:00pm):  Dine in or take out during the hours of 4-8 pm at the Rubio's on Stanford Ranch to benefit MOPS.  ***Pick up a flyer at the meeting. Must present flyer to cashier***

October 15 - Park Day (9:30-11:00 am): Mahany Park in Roseville, located at the corner of Woodcreek Oaks and Pleasant Grove Blvd. behind the Martha Riley Library

October 22 - MOPS meeting (9:00-11:00): Speaker Laura Frederick and our Mentor Moms will be sharing on the topic of finding rest

Christmas in September

Stuffed Bell Peppers Recipe

I told Karen I would post this recipe here. Its super healthy and very yummy! My notes have have an * before them. Its better with parmesan cheese sprinkled on when you serve it, but that makes it less healthy ;) Hope you like it. -Carly

TURKEY AND RICE STUFFED PEPPERS
Prevention’s Ultimate Quick and Healthy Cookbook
Prep time: 15 min Total time: 1 hour

5 large red bell peppers (or mix of red and yellow)
2 cups water
½ cup long-grain white rice
¾ tsp salt
2 tsp olive oil
1 lb lean ground turkey
1 med onion, chopped
2 garlic cloves, minced
1 ½ tsp dried thyme *I used TJs 21 Seasoning Salute
¼ tsp black pepper
1 lb fresh spinach (I used baby spinach), coarsely chopped
½ cup dried currants *I forgot the currants and it was still delicious
¼ cup chopped parsley *I also forgot parsley this time, still delicious :)

1. Preheat oven to 350. Bring large saucepan of water to boil over high heat.
2. Meanwhile, cut off and discard the tops of 4 bell peppers. Seed the peppers, being careful not to puncture them. Seed and dice the extra bell pepper; set aside.
3. Blanch the whole peppers in the boiling water for 2 minutes, or until slightly softened. Drain the peppers, then stand them upright in an 8 x 8-inch baking dish; set aside.
4. In a medium saucepan, combine 1 cup of the water, the rice, and ¼ tsp of the salt. Cover and bring to a boil over med-high heat; reduce the heat to medium and cook, covered, for 15 to 17 minutes, or until the rice is tender and the liquid is absorbed.***I used brown rice this time so I cooked the rice first and then did steps 1-3, 5-7.
5. Meanwhile, in a large non-stick skillet, warm the oil over med-high heat until hot but not smoking. Add the turkey and sauté for about 3 minutes, breaking up any clumps with a spoon. Add the onions, garlic, thyme, black pepper, and remaining ½ tsp of salt, and cook for about 3 minutes, or until the onions are softened.
6. Add the diced bell peppers, spinach, currants, and parsley; cover and cook for 3 minutes, or until spinach is wilted. Remove the pan from heat. *I added the spinach last, and literally had to smash it down to fit it all under the lid! After it wilted it fit fine – use the largest skillet you have because it will be very full by this point in the recipe.
7. Fluff the cooked rice with a fork. Add the spinach mixture to the rice and stir to combine. Spoon the rice mixture into the bell peppers and bake for 15mins. *If you cannot fit all of the mixture in the peppers, save the extra and spoon it into the pan around the peppers. My kids thought the bell pepper as bowls were cute, but didn't want to eat them. So I just spooned the extra mixture surrounding the peppers into a bowl and sprinkled parmesan cheese on it and they ate it with a spoon.

JBF Sale coming soon to our area...

Here is an article I received and was asked to post by the Just Between Friends sale that comes to our area every once in a while:

Local Moms Create Their Own Toy Stories
Just Between Friends helps moms find new homes for beloved toys through children’s consignment

Like Woody, Buzz Lightyear and Slinky Dog, countless quality, name brand toys are sitting around area homes no longer being used or played with. But, there are just as many local homes, with younger children, who would be more than happy to give a gently-used toy a treasured place in their toy boxes. Just Between Friends (JBF) will be an important part of tens of thousands of new toy stories this fall.

“Many parents feel they cannot afford name brand toys that are made to last because they cost more,” said Shannon Carter, coordinator of the Just Between Friends Community Children’s Consignment Sales Event in Sacramento. “However, Sacramento-area parents are embracing Just Between Friends because they can find exceptional bargains on the hot items their children want and need. In addition, they are helping other local families who are recycling unused and outgrown items from their growing families.”

The beauty of JBF consignment events is that we inspire families to take a good look at their homes twice each year and to recycle and repurpose those items which no longer have a use in that family, but still have significant value and life left in them for a second home. It’s a fact that toys stored for any amount of time will be at risk for things like battery corrosion, pieces that get misplaced and electronics that are adversely affected by heat, cold and moisture. JBF offers families a convenient alternative that puts money in their pockets and increases the useful lifespan of countless children’s items every season.

Just Between Friends will offer three fall/winter community children’s consignment events: Sacramento, August 27-29; Folsom September 10-12 and Roseville, September 24-26.

“Toys generally sell very well at Just Between Friends,” said Jill Mitchell, coordinator of the Just Between Friends events in Folsom. “We have parents who buy new toys to give as gifts; we’ve got grandparents who purchase items to have at their homes for when the grandkids come to play, and even daycares that are looking for affordable, but sturdy toys to replenish their play rooms. But, what is always so much fun, is when we see the joy on a child’s face who was just able to afford that ‘to die for’ toy on their piggybank budget.”

Consignors (sellers) make up to 70% on each sold item and Just Between Friends offers the opportunity to sell toys, clothing, baby equipment, outdoor playground toys, books, DVDs and pretty much anything that has to do with raising children. Volunteers, who run every aspect of each event, shop the sale before the public. Shoppers who sign-up on the JBF mailing list for each sale will receive a free admission coupon the week before each event.

The Just Between Friends fall/winter sales will benefit, in part, Sacramento Food Bank Family Services Mother-Baby Program. Park Day Update

This is just a message to remind you we have a park day coming up this Friday, July 23 at Memorial Park in Rocklin. However, we have changed the time to 10:00 due to the water feature opening at that time. Please bring towels, sunscreen and a lunch if you wish. Friends are welcome too. Hope to see you there!
