Spinach Brunch Dish from Stacey

Here is the recipe for that delcious spinach/tomato dish we had on Friday. Thanks, Stacey!

Ingredients
1-1/2 cups shredded medium cheddar cheese
1 box frozen chopped spinach (thawed and well drained)
10 eggs
1/2 to 3/4 cup milk
1 package feta cheese with basil and tomato
1 tomato, sliced
1 box sliced Portobello mushrooms
1 onion

Need 9X13 casserole dish (sprayed with non-stick cooking spray).

Sauté onion and mushrooms together until onions are soft, add spinach (frozen) just to heat.

Whip eggs and milk together with fork. Add cheddar cheese, then pour on spinach mixture. Crumble feta cheese and sprinkle over the top. Top with tomatoes. Bake at 350 degrees for 40 to 45 minutes. Knife inserted in middle should come out clean.

10 minutes to prepare, 40-45 minutes to bake

Ideas for giving back:

--Have kids take their red wagon out and collect non-perishable food for food banks.
--Operation Christmas Child: have kids help with both filling boxes and delivering boxes to the collection center.
--Go online to Compassion International, look for the children that have been waiting over a year and let your child pick one out to send $30 a month to. They will send you pictures of the child you support.
--If your child has really long hair and wants to cut it, encourage her to donate her hair to Locks of Love. Explain who the kids are that benefit from this organization and why they need the hair donations.
--Have them choose some toys to give to kids who don't have many (kids at a domestic violence shelter, for example).
--On holidays, serve food at a shelter together.
--To give back to the community, pick up trash at a park before you start to play.
